Sauteed Mushrooms

One of my very favorites, sauteed mushrooms, has been a staple on the "diet list" since my diabetes. Thank goodness! My diet calls for MANY vegetables, and so since this is one of my favorites, I have been lucky in that the ingredients that are used to saute' them are almost carb free. For those of you that don't like mushrooms, you don't know what you're missing, especially with steak! Several years ago, I came up with my own way of making them. It may or may not be similar to your method, but to me, it's the BEST! If any of you would like to give it a "go," here's my recipe.

1 8oz. carton of fresh whole mushrooms sliced
1/4 c. margarine (add more if desired)
3 T. extra virgin olive oil
1 tsp. minced garlic
1 T. fresh squeezed lemon juice
1T. soy sauce
1-2 T. Worcestershire sauce
*Heat all ingredients except mushrooms over medium heat until butter is melted. Stir to mix occasionally. Add mushrooms, stirring occasionally to avoid burning. If mixture seems to boil too high, turn down the heat! Cook for about 15-20 minutes or to desired tenderness!
